Resumen Introducción: El consumo de embutidos se ha asociado con serios problemas de salud que son comunes entre la población femenina. En el 2015 la Agencia Internacional para la Investigación en Cáncer clasificó los embutidos, como carcinógenos para los seres humanos ya que su ingesta está relacionada con el cáncer colorrectal. El aumento en el consumo de embutidos, los cuales son un alimento fuente de proteína de bajo costo, es diferencial según nivel socioeconómico y puede tener un impacto en la incidencia de enfermedades crónicas en la población. Objetivo: Examinar la asociación entre el consumo de embutidos y (a) la ingesta total de proteína, (b) la ingesta inadecuada de proteína, según NSE. Métodos: Se seleccionó una muestra (N = 135) de mujeres de 25 a 45 años, con 1 a 4 hijos, pertenecientes a tres diferentes niveles socioeconómicos, residentes de dos cantones del Gran Área Metropolitana de San José, Costa Rica, entre junio 2014 y marzo 2015. Mediante el uso de fotografías se indagó la percepción de las mujeres en cuanto al costo y su preferencia de consumo de 12 distintos alimentos, entre los cuales se incluyó los embutidos. Por medio de recordatorios alimentarios de 24 horas recolectados en tres visitas diferentes, y el uso de la base de datos de composición de alimentos ValorNut, se midió el consumo de proteína total en gramos y se determinó la cantidad promedio de veces por día que las mujeres consumen embutidos. A partir del peso de cada participante se determinó su requerimiento de proteína. La ingesta inadecuada de proteína se estimó como la diferencia entre el requerimiento y la ingesta observada. Mediante un modelo de regresión lineal se determinó la asociación entre el consumo total de proteína medido en gramos y la cantidad de veces por día que se ingiere embutidos. Mediante un modelo de regresión logística se estimó la asociación entre la ingesta inadecuada de proteína y la cantidad de veces por día que se ingiere embutidos. Resultados: Los embutidos son percibidos como la fuente de proteína menos apetecible, sin embargo, fue la tercera fuente de proteína más consumida. El consumo de embutidos difiere según NSE (P < 0.01), en el alto NSE es donde se consumen con menor frecuencia. Los embutidos más comúnmente consumidos fueron mortadela (bajo NSE), salchichón (NSE medio), y jamón de pavo (alto NSE). El consumo de embutidos se asocia significativamente con un incremento en la ingesta de proteína. Se encontró una asociación inversa entre el NSE y la ingesta inadecuada de proteína. Conclusiones: El consumo de embutidos está asociado con el nivel socioeconómico. Es probable que las mujeres consuman embutidos porque los perciben como un alimento fuente de proteína de bajo costo. Se requiere establecer estrategias educativas que ayuden a las mujeres a identificar sus necesidades alimentarias de proteína y a conciliar estas necesidades con la adquisición de alimentos saludables a un costo aceptable.


Abstract Introduction: Intake of processed meats has been associated with serious health problems that are common among women. In 2015, the International Agency for Research on Cancer classified processed meats as human carcinogens, associated specifically with colon cancer. The increase in intake of processed meats, which are a low-cost source of dietary protein, varies by socioeconomic status (SES) and can impact chronic disease incidence. Objective: Examine the association between processed meats intake and (a) total protein intake, (b) inadequate protein intake, by SES. Methods: This study included a representative sample (N = 135) of women age 25 to 45 years, with one to four children, from three different socioeconomic groups who were residents of two counties from the Greater Metropolitan Area of San José, Costa Rica between June 2014 and March 2015. Using photographs, we examined women's perceptions of the cost and perceived desirability of 12 different foods, including processed meats. Using 24-hour dietary recalls collected on three different days, and the ValorNut food composition database, we estimated total protein intake, in grams, and determined the intake frequency (times/day) of processed meat. Each women's dietary protein requirement was estimated based on her bodyweight. Inadequate protein intake was calculated as the difference between protein requirement and actual intake. A linear regression model was used to determine the association between total protein intake in grams and intake frequency (times/day) of processed meat. A logistic regression model was used to estimate the association between low protein intake and intake frequency (times/day) of processed meat. Results: Processed meats were perceived as the least preferred protein source but were the third most commonly consumed protein source. Consumption of processed meats differed by SES and was lower in the higher SES group (P < 0.01). The most commonly consumed processed meats by SES were "mortadella" (low-SES), sausages (middle-SES), and sliced turkey/ham (high-SES). Processed meat intake was significantly associated with an increase in protein intake. There was an inverse association between SES and inadequate protein intake. Conclusions: Processed meat intake is associated with SES. Women may consume processed meats because they are perceived to be a low-cost protein source. Educational strategies are needed to help women identify their protein needs and meet those needs with healthier and affordable dietary alternatives.

Algunos profesionales de la salud desaconsejan el consumo del yogur por el riesgo de provocar Síndrome Urémico Hemolítico, una enfermedad grave causada por cepas de E. coli productor de toxina Shiga (STEC por sus siglas en inglés). Estas bacterias pueden pasar del intestino del ganado vacuno a la carne o a la leche en condiciones inadecuadas de trabajo en frigoríficos o establecimientos productores de leche, respectivamente, siendo las hamburguesas insuficientemente cocidas el principal vector de la enfermedad y la leche cruda sin pasteurizar o los productos lácteos elaborados con ésta, otro factor de riesgo. En la industria láctea, el yogur se elabora con leche que es sometida a un doble tratamiento térmico. En la bibliografía moderna reportes de la presencia de STEC en yogures industriales, y los trabajos de revisión y meta-análisis no incluyen al yogur, pero sí a la leche sin pasteurizar, como vectores de trasmisión de STEC. En este contexto, y dada la evidencia científica disponible actualmente en relación a E. coli productor de toxina Shiga, el SUH y el yogur, parecería que estamos ante la presencia de una correlación espuria, la asociación de dos hechos que no tienen relación causal entre sí, más que a un hecho científico del cual uno (el yogur) es el responsable del otro (SUH).


Some health professionals discourage yogurt because of the risk of Hemolytic Uremic Syndrome (HUS), a serious disease caused by strains of Shiga toxin-producing E. coli (STEC). These bacteria can pass from the intestine of cattle to meat or milk under inadequate working conditions in slaughterhouses or milking plants. Undercooked hamburgers the main is vector of disease and unpasteurized raw milk or dairy products made with it, are another risk factors. In the dairy industry, yoghurt is made from milk that undergoes a double heat treatment. There are no reports of the presence of STEC in industrial yogurts in the modern bibliography, and reviews and meta-analysis do not point to yogurt as a risk factor for STEC, but rather unpasteurized milk. In this context, and given the scientific evidence currently available regarding STEC, HUS and yogurt, it would seem that we are in the presence of a spurious correlation, the association between two facts that have no causal relationship between them, rather than a scientific fact for which one (yogurt) may be responsible for the other (HUS).

Abstract: Aim: to estimate the population attributable risk of consumption of red and processed meat for colorectal cancer in Colombia. Methods: to model the expected incidence of colorectal cancer in the hypothetical situation of no red and processed meat consumption in Colombia, for the year 2010. A dynamic macrosimulation model, PREVENT 3.01, was used to integrate available cancer incidence, meat consumption prevalence and associated risk data and to evaluate the impact of eliminating red and processed meat from the Colombian diet on national colorectal cancer incidence. Results: Eliminating consumption of red meat altogether from the Colombian diet resulted in reductions in age-standardized colorectal cancer incidence, translating in reductions of 331 males (PAF 13%) and 297 female cases (PAF 10%). Eliminating processed meats had slightly stronger effects, with decreases of 362 males (PAF 14%) and 388 female cases (PAF 13%). Conclusions: A substantial proportion of the burden of colorectal cancer in Colombia can be attributed to the consumption of red and processed meat.


Resumen: Objetivo: estimar la fracción atribuible poblacional de consumo de carne roja y procesada para el cáncer colorrectal en Colombia. Métodos: modelación de la incidencia esperada de cáncer colorrectal en la situación hipotética de no consumo de carne roja y procesada en Colombia para el año 2010. Se utilizó un modelo dinámico de macrosimulación, PREVENT 3.01, para integrar los datos disponibles sobre incidencia de cáncer y evaluar el impacto de la eliminación de la dieta colombiana de la carne roja y procesada sobre la incidencia nacional de cáncer colorrectal. Resultados: La eliminación del consumo total de carne roja de la dieta colombiana dio lugar a reducciones en la incidencia estandarizada por edad de cáncer colorrectal, traduciéndose en la disminución de 331 casos en hombres (FAP 13%) y 297 en mujeres (FAP 10%). La eliminación de carnes procesadas tuvo efectos ligeramente más fuertes, con disminución de 362 casos en hombres (FAP 14%) y 388 en mujeres (FAP 13%). Conclusiones: Una proporción sustancial de la carga de cáncer colorrectal en Colombia puede atribuirse al consumo de carne roja y procesada.

OBJETIVO: Investigar a associação entre consumo de alimentos embutidos e obesidade generalizada, abdominal e generalizada com abdominal em nipo-brasileiros de Bauru, SP. SUJEITOS E MÉTODOS: Quatrocentos e quarenta e três mulheres e 329 homens nipo-brasileiros não miscigenados (≥ 30 anos) foram avaliados em estudo transversal de base populacional. Para o diagnóstico de obesidade, foram empregados os critérios da Organização Mundial da Saúde para asiáticos. A ingestão de alimentos foi avaliada por meio de questionário de frequência alimentar validado. A ingestão foi estratificada em terços para análise. RESULTADOS: Nos homens, a ingestão de colesterol e alimentos embutidos mostrou-se positivamente associada à obesidade generalizada com abdominal quando o primeiro terço de ingestão foi comparado ao último, após ajustes (OR 2,97; IC95% 1,13-7,78). Em mulheres, somente o grupo das carnes vermelhas associou-se à obesidade geral com abdominal após ajustes (OR 0,47; IC95% 0,23-0,96). CONCLUSÃO: Ingestão elevada de alimentos embutidos associou-se à obesidade generalizada com adiposidade abdominal em homens nipo-brasileiros, mas não em mulheres.


OBJECTIVE: The aim of this study was to investigate the association between the consumption of processed meat with overall, abdominal, and overall with abdominal obesity in a Japanese-Brazilian population, which is known to be at cardiometabolic risk. SUBJECTS AND METHODS: A total of 329 men and 443 women aged ≥ 30 years were evaluated in a cross-sectional population-based survey. Diagnosis of overall obesity and abdominal obesity were based on the World Health Organization (WHO) criteria for Asians. Food intake was assessed by a validated food frequency questionaire. RESULTS: In men, processed meat intake was positively associated with overall with abdominal obesity (OR 2.97; 95%CI 1.13-7.78) after adjustment. In women, only the red meat group was associated with overall with abdominal obesity after adjustment (OR 0.47, 95%CI 0.23-0.96). CONCLUSION: Our results showed that high intakes of processed meats were associated with overall with abdominal obesity in male Japanese-Brazilians, but not in females.

ABSTRACT

Objetivo. Avaliar a relação entre alimentos de origem animal e câncer de boca e orofaringe.Métodos. Estudo caso-controle, de base hospitalar, pareado por sexo e idade (± 5 anos) coma coleta de dados realizada entre julho de 2006 e junho de 2008. A amostra foi composta por296 pacientes com câncer de boca e orofaringe e 296 pacientes sem histórico de câncer atendidosem quatro hospitais da cidade de São Paulo (SP), Brasil. Foi aplicado um questionário semiestruturado,para a coleta de dados relativos à condição socioeconômica e aos hábitos deletérios(tabaco e bebidas alcoólicas). Para avaliação do consumo alimentar, utilizou-se um questionáriode frequência alimentar qualitativo. A análise se deu por meio de modelos de regressão logísticamultivariada, que consideraram a hierarquia existente entre as características estudadas.Resultados. Entre os alimentos de origem animal, o consumo frequente de carne bovina(OR = 2,73; IC95% = 1,27–5,87; P < 0,001), bacon (OR = 2,48; IC95% = 1,30–4,74;P < 0,001) e ovos (OR = 3,04; IC95% = 1,51–6,15; P < 0,001) estava relacionado ao aumentono risco de câncer de boca e orofaringe, tanto na análise univariada quanto na multivariada.Entre os laticínios, o leite apresentou efeito protetor contra a doença (OR = 0,41; IC95% =0,21–0,82; P < 0,001).Conclusões. O presente estudo sustenta a hipótese de que alimentos de origem animalpodem estar relacionados à etiologia do câncer de boca e orofaringe. Essa informação podeorientar políticas preventivas contra a doença, gerando benefícios para a saúde pública.


Objective. Evaluate the relationship between animal-derived foods and mouth andoropharyngeal cancer.Methods. Hospital-based case-control study matched by sex and age (± 5 years) withdata collected between July of 2006 and June of 2008. The sample contained 296 patientswith mouth and oropharyngeal cancer and 296 patients without a cancer history who weretreated in four hospitals in the City of São Paulo, State of São Paulo, Brazil. A semistructuredquestionnaire was administered to collect data regarding socioeconomic condition andharmful habits (tobacco and alcoholic beverage consumption). To assess eating habits,a qualitative questionnaire that asked about the frequency of food consumption wasused. The analysis was rendered by means of multivariate logistic regression models thatconsidered the existing hierarchy among the characteristics studied.Results. Among foods of animal origin, frequent consumption of beef (OR = 2.73;CI95% = 1.27–5.87; P < 0.001), bacon (OR = 2.48; CI95% = 1.30–4.74; P < 0.001) andeggs (OR = 3.04; CI95% = 1.51–6.15; P < 0.001) was linked to an increased risk ofmouth and oropharyngeal cancer, in both the univariate and multivariate analyses.Among dairy products, milk showed a protective effect against the disease (OR =0.41; CI95% = 0.21–0.82; P < 0.001).Conclusions. This study affirms the hypothesis that animal-derived foods can beetiologically linked to mouth and oropharyngeal cancer. This information can guidepolicies to prevent these diseases, generating public health benefits.

ABSTRACT

Cardiovascular mortality has been associated with changes in lifestyle and food habits. The occidental diet has been characterized by high intake of animal fat and meat, and it is associated whit increased risk of type 2 diabetes and high blood pressure, an increase in levels of markers of endothelial dysfunction, and presence of pro-thrombotic risk factors. We search the Pubmed database and other review references. Inclusion criteria were: papers published after 1999, randomized controled clinical studies, case-control studies, systematic reviews and methanalyses. Vegetarians groups show less cardiovascular morbidity and mortality than non-vegetarians. The evidence indicated that a decreasing intake of red meat, saturate fat, trans fat, and mainly processed meat, and an increase in the intake of whole grain cereals, fruits, vegetables and fish, are associated with a better overall cardiovascular health and survival.


El aumento de la mortalidad cardiovascular en el último tiempo está fuertemente asociado a cambios en los hábitos de alimentación. La dieta occidental caracterizada por una alta ingesta de alimentos de origen animal, presenta mayor riesgo de diabetes tipo 2 (DM 2), hipertensión arterial (HTA), aumento de marcadores de disfunción endotelial y factores protrombóticos. La búsqueda se realizó en la biblioteca online Pubmed y en referencias de otras revisiones. Los criterios de inclusión fueron: artículos de 1999 en adelante, ensayos clínicos aleatorizados-controlados, estudios caso-control, revisiones sistemáticas y meta análisis. En grupos con alto consumo de alimentos de origen vegetal se ha evidenciado una menor morbi-mortalidad cardiovascular, comparado con los grupos con alta ingesta de alimentos de origen animal. La evidencia apoya que la disminución en el consumo de carnes rojas, grasas saturadas y grasas trans, así como el aumento en el consumo de cereales integrales, frutas, vegetales y pescado, disminuye la morbi-mortalidad global y cardiovascular.

O objetivo é alertar profissionais para a seriedade deste agravo e refletir sobre as práticas de vigilância da saúde encontradas.

ABSTRACT

Comunicamos 6 casos de telangiectasia macularis eruptiva perstans, forma de mastocitosis cutánea de rara observación en la casuística nacional e internacional. Exponemos el hallazgo inusual de compromiso facial, con la presencia de lesiones maculosas y telangiectásicas en dos de los pacientes, así como la ausencia de dermografismo y signo de Darier en todos los casos, hechos que motivaron la presentación de este trabajo. Se efectúa una revisión de las características de la mastocitosis y de distintas clasificaciones de la misma. Se destaca el valor relativo del aumento del número de mastocitos en el estudio histológico de esta entidad

ABSTRACT

Se estudió un brote de triquinosis ocurrido en el sur de la provincia de Buenos Aires, zona endémica para esta zoonosis. Dieciocho personas fueron afectadas por la ingesta de productos elaborados con carne de cerdo (chacinados sin el correspondiente control veterinario. Se describen síntomas y signos de los apcientes, como así también estudios serológicos relacionados con la formación de anticuerpos y la capacidad citotóxica de los sueros. Se analizaron los producto elaborados (chacinados), así como ocho cerdos interdictos de la granja donde se originó el brote. Con el fin de estudiar la cadena de transmisión se capturaron y analizaron ratas de los alrededores del hábitar de los porcinos. Este trabajo demuestra que los principales síntomas y signos fueron: mialgia, edema palpebral, fiebre y cefalea, que el 61// de los pacientes presentó anticuerpos contra el estadio de larva muscular entre los 15-30 días posteriores a la ingesta, que sólo presentaron anticuerpos contra la larva recien nacida a los 40-60 días postinfección cinco de los dieciocho pacientes, que la carga parasitaria en los chacinados fue de 5,3 larvas/g, que dos de los ocho cerdos se diagnosticaron por técnicas serológicas, mientras que por técnicas parasitológicas se detectó sólo uno y que la rata es uno de los principales reservorios en la cadena epidemiológica

ABSTRACT

Las gastroenteritis y enfermedades diarreicas ocupan el segundo lugar de morbilidad en el estado de guerrero. Estos padecimientos en muchos casos son causados por la presencia de salmonella en los alimentos. Para conocer las condicicones higénicas de algunos de ellos, se analzaron un total de 336 muestras de carnes crudas, recolectadas en nueve localidades de la entidad para determinar la presencia de salmonela, utilizando los métodos estánddar. Un total de 109 muestras estuvieron contaminadas con este patógeno, lo cual representa un 32.44 por ciento de postividad. Las muestras que presentaron los mayores índices de salmonella fueron chorizo y longaniza, carne de cerdo y cecina, comprobándose una calidad microbiológica un tanto deficiente en estos productos

Many cases are the result of salmonella in food. 336 meat samples, collected from nine towns in Guerrero state, were analyzed to check the presence of Salmonella. 109 samples (32.44%) were contaminated with this bacterium The kinds of meat with salmonella mainly were: sausage, pork meat and cured meat. The microbiology quality was little deficient in this products.
